Healthy Pancakes for Easter Breakfast

There are few things that could stop your kids from chowing down all their chocolate eggs on Easter morning. And while chocolate for breakfast sounds like a winner (I joke… I joke…) there’s no question your kids will love these super adorable bunny pancakes. Better yet, these are healthy bunny pancakes, but you don’t have to mention the “h” word to them. These pancakes are so delicious that they’ll gobble them up with sheer delight!

Making pancakes is a job best done with little helpers. Yes, it’s going to be messy. And yes, your kitchen will probably wind up with a dusting of flour in every nook and cranny. But what are these moments except for the experience? Easter morning is, after all, a morning to be shared with your loved ones, and pancake eating is so much more fun when you (your kids) helped make them. Best of all, this is such an easy recipe, so no need to stress about “getting it right”. It goes without saying, always practice safety when operating appliances around kids.

Ingredients:

1/2  cup of spelt flour
1/2 cup of wholemeal flour
2 tsp of baking powder
pinch of salt
1 egg
2/3 cup of buttermilk
2 medium ripe bananas, mashed
Butter
Toppings: banana slices, blueberries, maple syrup

Instructions:

  1. In a large bowl, mix the flour, baking powder and salt.
  2. In a separate bowl, whisk the egg and mix in the buttermilk.
  3. Add the liquid to the flour mixture and combine.
  4. Stir in the bananas.
  5. Heat a non-stick skillet to medium heat and add a dab of butter.
  6. Using a large spoon or ladle, pour batter in pan to make pancakes in the middle of the pan.
  7. For each “bunny”, make a medium-sized circle (for the body), smaller circle (for the head), and two ovals (for the ears).
  8. Turn the heat down slightly to allow the pancakes to cook gently.
  9. Allow the pancakes to cook for few minutes until they become firm enough to flip.
  10. Flip the pancake carefully and fry for another 2 minutes or until golden.
  11. Form bunny by arranging the ears on the plate first, then the head, then the body. Use a banana slice for the tail and one each for the feet. Arrange blueberries at the bottom of the plate and serve with maple syrup.

For a simpler bunny, make one large pancake (for the head) and two long oval pancakes (for the ears). Use the fruit to make eyes, nose, and teeth. Voila!! Your masterpiece is complete. Take a moment to appreciate your #foodart, then dive right in.
