Raspberry Chocolate “Nicecream”

If you are craving the decedent creaminess of ice-cream, but just not up for the sugar high (and subsequent crash), then this is the recipe for you!

For the uninitiated, nicecream is basically just frozen bananas blended up until they are super smooth and creamy, with the look and taste of ice-cream. You can really add anything to suit your own tastebuds, but it’s pretty hard to go past this version, which is finished beautifully with the addition of chocolatey goodness.

Serves: 1

Prep Time: Approx. 5 minutes (plus freezer time)

Ingredients:
1 large frozen banana (peel and chop up banana, put in a zip-lock bag and freeze overnight)
Splash of almond or coconut milk
¼ cup fresh raspberries
1/4 tsp vanilla extract
Cacao nibs to sprinkle over the top (optional), or you could use some shaved dark chocolate if you prefer 
      Method:
      1. Blend everything together (apart from the cacao nibs) for approximately 2 minutes
      2. Place into serving dish and sprinkle with the cacao nibs
      3. Yum, now eat and enjoy!
